ThaiSauce

As promised here are the recipes!

Josh Bayne’s Thai Sauce

Lee Kum Kee (has to be this brand, says Josh, he tried the others) Chili Garlic Sauce – 2 spoonfuls

Lime juice – half a lime worth

Rice Wine Vinegar – few splashes

Soy sauce – few splashes

Peanut Butter, Jif Brand– 2 to 3 big spoons worth, smooth kind

Sugar – couple pinches

Water – For pizza sauce = a couple splashes. For pasta or veggie sauce = half a cup to a cup. Water must be warm.

Mix thoroughly in a bowl, and top accordingly. Amount of water depends on what kind of thickness you want the sauce to have.

Kaj’s BBQ Thai Sauce

Lee Kum Kee Chili Garlic Sauce – 3 spoonfuls

Lime juice – entire lime worth

Rice wine vinegar – splash

Soy sauce – splash

Peanut Butter – 2 to 3 spoonfuls worth, smooth kind.

Brown sugar – 4 spoonfuls or a quarter cup approx

Dash of cayenne

Small teaspoon of ground pepper, or a few turns on a grinder

Water – half a cup

Mix thoroughly in a bowl, paint onto chicken during last few turns on the grill (that’s all I’ve tried, but I bet it’s great on about anything). Probably really good on pork too. The goal of the sauce is both a sweet and spicy effect, with the brown sugar and cayenne offsetting nicely. Absolutely amazing on stir fry too, but watch your temperature since the sugar content is up there, some burning could happen. Josh’s is probably better on veggies.

Enjoy!

When you make a cheese steak at home you don’t have to worry about wit, wit out, whiz, or whatever. Here is the best recipe for making real Philly cheese steaks at home. Hy-vee has frozen boxes of meat sheets (yum) or you can get the meat counter to slice rib-eye in deli fashion. Fry up the meat on a griddle or in a skillet. Now I have yet to find cheese wiz the way it is in Pat’s, Geno’s or Jim’s (all Philly steak shops). Velveeta has the same consistence as cheese wiz and should work as a good substitute. Melt that down. Find a great sandwich roll, somewhere between a brat roll and a french baguette. Put steak on bread, generously smear melted cheese all over. Variations include fried onions, and/or peppers. I like lettuce and tomato. My husband likes mayo (gross)! You can also use an type of cheese.
